French is a rather formal language and it is important to always use the appropriate title:

Bonjour Monsieur To a gentleman
Bonjour Madame To a lady (Mrs.)
Bonjour Mademoiselle To a lady (Miss)
A bientôt See you later

Good night has an equivalent : “Bonne nuit” but you will only use this phrase when you are on your way to bed.

You will use Madame for a married woman (look out for the wedding ring) or for an elderly person and Mademoiselle for a single woman, in doubt use your judgement and access the age of the person, if still in doubt use Mademoiselle it is always flattering.

Oui and Non are often use with a form a politeness, “oui, s’il vous plait”, “non, merci” to get somebody’s attention use “s’il vous plait”
